Toasted wholemeal bread with pumpkin seeds, served with Stracchino soft cheese from the “Palagiaccio” farm, "Sbriciolona" dry-cured fennel salami from the "Mannori" butchers, candied pumpkin

Savoy cabbage timbale, stuffed with slow-cooked lamb shoulder and Casentino potatoes, wrapped in savoy cabbage leaves and glazed with its own stock, reduced with Vermentino
