The menu of the Christmas Eve dinner on December 24 at Arno Restaurant inside the FH55 Med Executive Hotel:

Amuse-Bouche with Welcome Flute 

Small fillet of fried Black Code baccalà served on ‘Vesuvius’ sauce, plum tomatoes, raisins, pine nuts and spring onion

Gravlax salmon carpaccio with beetroot on a bed of crunchy fennel salad

Tarocco orange and Leccino olives

 

Vialone nano rice, aged 24 months, mixed with Cacio Toscano cheese and Sichuan pepper 

with raw prawns fished in Scotland

 

Fillet of stone bass marinated in herbs and seared, served over a delicate stew of rainbow chard, 

vine-dried cherry tomatoes and caper powder

 

Florentine Panbriaco zuccotto and custard 

 

Artisanal pandoro and panettone served with hot sauces
