December 31 Menu:

Amuse-Bouche with Welcome Flute 

Mini sesame mille-feuille with whipped farm-produced ricotta, toasted hazelnuts and Pistoia Apennine honey

Pan-seared Mediterranean Ikejime red tuna, 

Late radicchio glazed with "Compagnia del Montale” red wine vinegar and a citrus dressing

 

Riserva San Massimo Carnaroli rice, aged 18 months, mixed with Porcini mushrooms 

and raw Mazara red prawns

 

Fresh button pasta parcels filled with Pienza pecorino cheese

and thinly sliced Muscovy duck ragout and crisp Tuscan kale

 

Tuscan filet mignon with escalopes of foie gras,

reduction of Sandeman Fine White Port and sweet potato purèe

 

Breton shortcrust tartlet with marron lglacé mousse, 

candied orange peel and Stravecchio Marsala caramelized sauce

 

Artisanal pandoro and panettone served with warm sauces
