Fried calamari with pepper and guacamole

Mazara del Vallo red prawn tartare with whipped stracciatella, basil-flavored oil and young shoots

Risotto with P.G.I. Carnaroli rice from the Po Delta, Chioggia beetroot finished with Beurre Blanc

and Eborinato blue cheese and toasted walnuts

Pan-seared Scottish Red Label salmon served on a quinoa and crunchy vegetable salad

with passion fruit dressing

White chocolate semifreddo with raspberry center and Ruby chocolate glaze
